400g spaghetti or tonnarelli

1 cup Pecorino Romano cheese, finely grated

1 cup freshly cracked black pepper

Salt, to taste

2 tablespoons unsalted butter (optional, for added creaminess)

Boil the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or tonnarelli and cook until al dente, about 8-10 minutes, according to package instructions. Reserve 2 cups of pasta cooking water before draining the pasta.

    Make the Sauce: In a large skillet, over medium heat, toast the freshly cracked black pepper for about 1 minute until fragrant. This will elevate the flavor of the pepper in the dish.
