4 large Russet potatoes, peeled and diced

1 large onion, finely chopped

2 carrots, chopped

2 celery stalks, chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup whole milk

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery and sauté until the vegetables are softened, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced potatoes, vegetable or chicken broth, dried thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil.

        Reduce the heat to a simmer and cook for about 20 minutes, or until the potatoes are tender.

          Using a potato masher or an immersion blender, partially mash the soup to thicken it slightly, while leaving some chunks of potatoes intact for texture.

            Stir in the whole milk and adjust seasoning as needed. Heat through for a few more minutes if necessary.

              Once heated, remove from heat and allow the flavors to meld for a couple of minutes.

                Serve hot, garnished with chopped fresh chives on top.
