For the Chocolate Cake:

1 cup (240 ml) boiling water

2 cups (250 g) all-purpose flour

1 cup (100 g) unsweetened cocoa powder

2 cups (400 g) granulated sugar

1½ teaspoons baking soda

1 teaspoon baking powder

1 teaspoon salt

1 cup (240 ml) whole milk

½ cup (120 ml) vegetable oil

2 large eggs

2 teaspoons vanilla extract

For the Coconut-Pecan Frosting:

1 cup (240 ml) evaporated milk

1 cup (200 g) granulated sugar

½ cup (115 g) unsalted butter

4 large egg yolks, beaten

1 teaspoon vanilla extract

1 cup (90 g) sweetened shredded coconut

1 cup (120 g) chopped pecans

For the Chocolate Ganache (optional):

1 cup (240 ml) heavy cream

8 oz (225 g) semi-sweet chocolate, chopped

Instructions
 

Prepare the Chocolate Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

      - In a mixing bowl, combine the boiling water and cocoa powder. Whisk until smooth, then let it cool slightly.

        - In another bowl, whisk together flour, baking soda, baking powder, and salt; set aside.

          - In a large bowl, beat together eggs, milk, oil, sugar, and vanilla extract until well blended. Gradually add the flour mixture and mix until combined.

            - Slowly add the cocoa mixture to the batter and mix until smooth. Do not overmix.

              - Divide the batter evenly among the three prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes before transferring to wire racks to cool completely.

                Make the Coconut-Pecan Frosting:

                  - In a saucepan over medium heat, combine evaporated milk, sugar, butter, and beaten egg yolks. Cook, stirring constantly until thickened (about 12 minutes).

                    - Remove from heat and stir in vanilla, coconut, and pecans. Let it cool down to room temperature before using as frosting.

                      (Optional) Prepare the Chocolate Ganache:

                        - In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and pour the cream over the chopped chocolate. Let it sit for 5 minutes, then stir until smooth.

                          Assemble the Cake:

                            - Place one layer of the chocolate cake on a serving plate. Spread a generous layer of coconut-pecan frosting on top.

                              - Add the second layer of cake and repeat the frosting process.

                                - Top with the final layer of cake. Spread a thin layer of frosting on the top and sides for a crumb coat. Chill for 30 minutes.

                                  - Now, use the remaining frosting to fully cover the cake or drizzle with chocolate ganache for an extra touch of decadence.

                                    Serve:
