1 large head of cauliflower, cut into florets

8 oz (225g) cremini or button mushrooms, sliced

6 cloves of garlic, minced

4 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

½ teaspoon red pepper flakes (adjust for heat preference)

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon (for brightness)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large mixing bowl, combine the cauliflower florets and sliced mushrooms.

      Make the Garlic Mixture: In a small bowl, whisk together the minced garlic, olive oil, smoked paprika, dried thyme, red pepper flakes, salt, and pepper.

        Combine Ingredients: Pour the garlic oil mixture over the vegetables in the mixing bowl. Toss well to ensure all florets and mushrooms are evenly coated.

          Roast: Spread the seasoned vegetables in a single layer on a large baking sheet. Make sure they aren’t overcrowded to allow for proper roasting.

            Bake: Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the cauliflower is golden brown and tender, and the mushrooms are juicy.
