4 bone-in pork chops (about 1 inch thick)

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup sliced mushrooms (cremini or button)

1 cup heavy cream

¼ cup chicken broth

2 tablespoons fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Season both sides of the pork chops with salt, pepper, dried thyme, and paprika. Make sure to coat them evenly.

    Sear the Pork Chops: In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 145°F). Remove them from the skillet and set aside to rest.

      Sauté the Garlic and Mushrooms: In the same skillet, lower the heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant. Next, add the sliced mushrooms and cook until they are browned and tender, approximately 5-7 minutes. Stir occasionally to prevent burning.

        Make the Creamy Sauce: Pour in the chicken broth and scrape up any brown bits from the bottom of the skillet (these add flavor!). Let it simmer for 2 minutes, then reduce the heat to low and stir in the heavy cream. Cook for another 3-4 minutes until the sauce thickens slightly.
