Ingredients

1 cup orzo pasta

3 tablespoons olive oil

4 cloves garlic, minced

1 cup vegetable or chicken broth

1/2 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped

Zest of 1 lemon

1/4 cup peas (fresh or frozen)

Instructions

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente, typically about 8 minutes. Drain and set aside.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant and lightly golden. Be careful not to burn the garlic.

Add Broth and Season: Pour in the vegetable or chicken broth, and bring to a simmer. Add the red pepper flakes, salt, and black pepper to taste.

Combine Orzo and Sauce: Stir in the cooked orzo, peas, and lemon zest into the skillet. Cook for another 3-5 minutes, allowing the orzo to absorb the flavors and the peas to heat through.

Incorporate the Cheese: Once everything is heated and well combined, remove the skillet from heat. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if needed.

Garnish and Serve: Sprinkle the chopped parsley on top for a fresh finish. Serve warm as a main dish or side.
