1 lb (450g) boneless chicken breast, cut into 1-inch cubes

1/4 cup olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon red pepper flakes (optional for a kick)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Wooden or metal skewers (if wooden, soak in water for 30 minutes prior to use)

Instructions
 

In a large mixing bowl, combine the olive oil, minced garlic, Parmesan cheese, dried Italian herbs, red pepper flakes, salt, and pepper. Mix well to form a marinade.

    Add the cubed chicken to the marinade and ensure that all pieces are well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for deeper flavor).

      Preheat your grill or grill pan over medium-high heat.

        Thread the marinated chicken pieces onto the skewers, leaving a bit of space between each piece for even cooking.

          Once the grill is hot, place the skewers on it. Cook for 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F or 74°C).

            Remove the skewers from the grill and let them rest for a few minutes.

              Transfer the skewers to a platter, and sprinkle with fresh parsley for garnish before serving.
