Ingredients

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

4 garlic cloves, minced

1/4 cup grated Parmesan cheese

1/4 cup olive oil

1 tablespoon fresh parsley, chopped

1 tablespoon lemon juice

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions

In a large mixing bowl, combine the minced garlic, grated Parmesan cheese, olive oil, chopped parsley, lemon juice, oregano, salt, and black pepper. Mix well to create a marinade.

Add the chicken cubes to the marinade, ensuring that each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Preheat your grill to medium-high heat.

Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C) and has nice grill marks.

Remove skewers from the grill and let them rest for a couple of minutes before serving.

Optional: Sprinkle additional Parmesan cheese and fresh parsley over the skewers before serving for an extra touch of flavor and presentation.
