1 pound chicken breast, cut into 1-inch cubes

1/4 cup olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the olive oil, minced garlic, grated Parmesan cheese, parsley, Italian seasoning, red pepper flakes, salt, and pepper. Mix well.

    Prepare the Chicken: Add the cubed chicken to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

      Skewer the Chicken: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

        Cook the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (75°C).

          Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve hot, garnished with additional parsley and a sprinkle of Parmesan if desired.
