2 large russet potatoes, peeled and thinly sliced

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 teaspoon fresh parsley, chopped

1 teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

1 tablespoon balsamic vinegar (optional, for serving)

Fresh herbs for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C). Grease a 12-cup muffin pan with non-stick spray or olive oil.

    In a large mixing bowl, combine the thinly sliced potatoes, olive oil, garlic, rosemary, thyme, parsley, salt, and black pepper. Toss until the potatoes are well coated.

      Begin layering the potato slices in the muffin cups, starting with a layer in a circular pattern, overlapping each slice slightly. Continue layering until the muffin cups are full, creating a spiral effect.

        Sprinkle the grated Parmesan cheese evenly over the tops of each potato galette.

          Bake in the preheated oven for 25-30 minutes, or until the potatoes are crispy and golden brown. A toothpick should easily slide through the potatoes when they're done.

            Remove the muffin pan from the oven and let it cool for a few minutes. Carefully run a knife around the edges of each galette to loosen them, then gently lift them out using a fork.

              (Optional) Drizzle with balsamic vinegar before serving for an extra layer of flavor.

                Garnish with fresh herbs if desired and serve warm as a delightful side dish or appetizer!
