Ingredients
  

4 boneless, skinless chicken thighs

1/2 cup pitted green olives, sliced

1/2 cup pitted black olives, sliced

1 head garlic, cloves separated and peeled

1/2 cup chicken broth

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Zest of 1 lemon

Juice of 1 lemon

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Chicken:

    - Season the chicken thighs generously with salt, pepper, oregano, and red pepper flakes. Make sure to rub the seasoning into the meat for better flavor.

      Sauté the Garlic:

        - In a large skillet, heat the olive oil over medium heat. Add the peeled garlic cloves and sauté for about 3-4 minutes until they are golden and fragrant. Remove the garlic from the skillet and set aside.

          Brown the Chicken:

            - In the same skillet, add the seasoned chicken thighs. Sear them for about 5-6 minutes on each side until they are browned and cooked through. Remove the chicken from the skillet and set aside.

                - In the same skillet, add the sliced green and black olives, the reserved garlic cloves, chicken broth, lemon zest, and lemon juice. Scrape the bottom of the skillet to release any browned bits.

                  Combine and Simmer:
