Garlic Cajun Smashed Potatoes

2 pounds baby potatoes

4 cloves garlic, minced

½ cup unsalted butter, melted

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

½ cup sour cream

¼ cup green onions, sliced (for garnish)

Instructions
 

Boil the Potatoes: Place the baby potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and let them cool slightly.

    Prepare Garlic Butter: In a small saucepan, melt the unsalted butter over low heat. Add minced garlic, Cajun seasoning, and smoked paprika. Stir for about 2 minutes until the garlic is fragrant but not burned. Remove from heat.

      Smash the Potatoes: On a large baking sheet lined with parchment paper, place the boiled potatoes. Using a fork or a potato masher, gently smash each potato until flattened but still intact.

        Season the Potatoes: Brush the garlic butter mixture generously over the smashed potatoes. Make sure each one is well-coated for maximum flavor. Sprinkle with salt and pepper to taste.
