1 lb sirloin steak, cut into 1-inch cubes

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

2 cups baby potatoes (about 1-inch size)

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon paprika

Prep Potatoes: Start by boiling the baby potatoes in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until fork-tender. Drain and let them cool for a few minutes.

    Preheat the Oven: Preheat your oven to 425°F (220°C).

      Smashed Potatoes: Place the boiled potatoes on a parchment-lined baking sheet. Gently press down on each potato with the bottom of a cup or potato masher until they are roughly flattened.

        Season and Bake: Drizzle the smashed potatoes with olive oil, sprinkle with paprika, salt, and pepper. Bake in the preheated oven for 20 minutes or until the edges are golden and crispy.

          Add Cheese: Remove the potatoes from the oven and sprinkle shredded cheddar cheese over the top. Return to the oven to melt the cheese for an additional 5 minutes.
