1 lb sirloin steak, cut into 1-inch cubes

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper to taste

1 lb baby potatoes, quartered

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Preheat your oven to 425°F (220°C). In a bowl, toss the quartered baby potatoes with olive oil, paprika, salt, and pepper until evenly coated.

    Bake the Potatoes: Spread the potatoes in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, or until crispy and golden brown, flipping halfway through.

      Sear the Steak Bites: While the potatoes are baking, heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil. Once hot, add the steak bites in a single layer (work in batches if necessary). Sear for 2-3 minutes, until browned on all sides.

        Add Garlic Butter: Reduce the heat to medium. Add the butter, minced garlic, thyme, and rosemary to the skillet. Toss the steak bites in the butter mixture and cook for an additional 1-2 minutes, ensuring the garlic doesn't burn. Season with salt and pepper to taste.

          Combine and Serve: Once the potatoes are crispy and the steak is cooked to your desired doneness, remove from heat. Plate the steak bites alongside the crispy potatoes. Drizzle any remaining garlic butter from the skillet over the top.

            Garnish: Sprinkle freshly chopped parsley over the dish for a pop of color and freshness.
