1 lb steak (sirloin or filet mignon), cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Optional: red pepper flakes for heat

Prepare the Potatoes: In a large pot, add the halved baby potatoes and cover with water. Add a pinch of salt and bring to a boil. Cook for about 15 minutes or until fork-tender. Drain and set aside.

    Season the Steak: While the potatoes are cooking, in a bowl, combine the steak cubes, smoked paprika, salt, and pepper. Toss to coat the meat evenly.

      Sear the Steak: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Once hot, add the seasoned steak cubes and sear for about 2-3 minutes on each side until browned. Remove the steak from the skillet and keep warm.

        Cook the Potatoes: In the same skillet, add the cooked potatoes. Sauté for about 5 minutes until they start to get golden and crispy.

          Add Garlic Butter: Lower the heat to medium, then add the butter and minced garlic to the skillet with the potatoes. Stir and cook for an additional 2 minutes, allowing the garlic to become fragrant.

            Combine and Serve: Add the seared steak back into the skillet with the garlic butter potatoes. Toss everything together to coat in the garlic butter. Cook for an additional minute to heat the steak through.

              Garnish: Remove from heat, sprinkle with chopped parsley, and add red pepper flakes if desired for a spicy kick. Serve immediately.
