1 lb sirloin steak, cut into 1-inch cubes

2 tablespoons olive oil

4 tablespoons unsalted butter

4 garlic cloves, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

1 lb baby potatoes, halved

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with olive oil, paprika, salt, and pepper until well coated. Spread them out on a baking sheet in a single layer. Roast in the preheated oven for around 25-30 minutes or until golden brown and crispy, turning halfway through.

    Sear the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil. Once hot, add the steak bites in a single layer and season with salt and pepper. Sear for 2-3 minutes on each side until a nice crust forms and they reach your desired doneness (medium-rare is about 130°F/54°C). Remove the steak bites from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium. Add the butter and allow it to melt. Stir in the minced garlic, rosemary, and thyme, cooking until fragrant, about 1-2 minutes. Make sure not to burn the garlic.

        Combine Everything: Return the steak bites to the skillet with the garlic butter sauce, tossing to ensure they are well coated. Cook for an additional 2 minutes to marry the flavors.

          Serve: Remove the potatoes from the oven and serve alongside the garlic butter steak bites. Drizzle any remaining garlic butter sauce over the top and garnish with fresh parsley. Enjoy!
