1 lb sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

2 tablespoons olive oil

2 pounds russet potatoes, peeled and cubed

½ cup milk (or more for desired creaminess)

½ cup sour cream

1 tablespoon chives, finely chopped for garnish

Prepare the Steak Bites: Season the steak cubes generously with salt and pepper.

    Cook the Potatoes: In a large pot, add the cubed potatoes and cover them with cold water. Bring to a boil and cook for 15-20 minutes or until tender. Drain and set aside.

      Heat the Olive Oil: In a large skillet over medium-high heat, add the olive oil. Once hot, add the seasoned steak cubes in batches, making sure not to overcrowd the pan. Brown the steak bites for about 2-3 minutes on each side, rotating for an even cook. Remove from the skillet and set aside.

        Make Garlic Butter: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and fresh thyme. Cook for 1-2 minutes until fragrant, making sure the garlic does not burn.

          Toss Steak Bites: Return the cooked steak bites to the skillet and toss them in the garlic butter until well coated. Cook for another minute, then remove from heat.

            Prepare the Mash: In a large bowl, combine the drained potatoes, milk, sour cream, salt, and pepper. Use a potato masher or a fork to mash the mixture to your desired creaminess. Adjust the milk or sour cream for consistency if needed.
