1 pound sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves

Salt and pepper to taste

1 tablespoon olive oil

For the Cheesy Smashed Potatoes:

1 pound baby potatoes

1/2 cup shredded cheddar cheese

1/4 cup sour cream

3 tablespoons unsalted butter

1/4 teaspoon garlic powder

Salt and pepper to taste

Chopped chives for garnish (optional)

Prepare the Potatoes: Begin by boiling the baby potatoes in a pot of salted water until fork-tender, about 15-20 minutes. Drain and cool slightly.

    Smash the Potatoes: On a parchment-lined baking sheet, place the boiled potatoes and gently smash them with the bottom of a glass or spatula until flattened but not breaking apart.

      Make the Cheesy Mixture: In a bowl, mix together the cheddar cheese, sour cream, butter, garlic powder, and salt and pepper. Spread this mixture evenly over the smashed potatoes.

        Bake Potatoes: Preheat your oven to 400°F (200°C). Bake the cheesy smashed potatoes for about 15 minutes or until the cheese is bubbly and golden.

          Cook the Steak Bites: While the potatoes are baking, heat olive oil in a large skillet over medium-high heat. Season the steak cubes with salt and pepper.

            Sear the Steak: Once the skillet is hot, add the steak bites in a single layer. Cook for about 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from the skillet.

              Add Garlic Butter: In the same skillet, lower the heat to medium and melt the tablespoons of butter. Add the minced garlic and thyme, stirring constantly for about 1 minute until fragrant.
