1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley for garnish

Prepare the Potatoes: Heat the olive oil in a large skillet over medium heat. Add the halved baby potatoes to the skillet and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until they are golden brown and fork-tender. Remove the potatoes from the skillet and set aside.

    Cook the Steak: In the same skillet, increase the heat to medium-high and add the diced steak. Season with salt and pepper. Cook for about 4-5 minutes, allowing the steak to sear until it’s browned on the outside but still medium-rare in the center. Take care not to overcrowd the pan; you may need to cook in batches.

      Add Garlic and Herbs: Reduce the heat to medium and add the butter, minced garlic, rosemary, and thyme to the skillet. Stir well and allow the garlic to sauté for about 1 minute until fragrant but not burnt.

        Combine Everything: Return the cooked potatoes to the skillet, toss them with the steak and garlic butter mixture, and cook for an additional 2-3 minutes until everything is well coated and heated through.

          Serve: Remove from heat, taste, and adjust seasoning if necessary. Garnish with fresh parsley before serving.
