Garlic Butter Shrimp Grilled Cheese Sandwich

Ingredients
  

1 lb shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon Old Bay seasoning

1/4 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

4 slices sourdough bread

1 cup shredded sharp cheddar cheese

1/2 cup mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium skillet over medium heat, melt 2 tablespoons of butter.

    Add the minced garlic and sauté for about 1 minute until fragrant, making sure it doesn’t burn.

      Stir in the shrimp, Old Bay seasoning, red pepper flakes, salt, and pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes. Remove them from the heat and set aside.

        In a separate skillet, melt the remaining 2 tablespoons of butter over medium heat.

          Place two slices of sourdough bread in the skillet and layer half of the cheddar and mozzarella cheese on each slice.

            Add half of the cooked garlic butter shrimp evenly on top of the cheese.

              Top with the remaining cheese and cover with the other two slices of sourdough bread to form the sandwich.

                Cook until the bread is golden brown, about 3-4 minutes per side. If the cheese isn’t melting, cover the skillet with a lid to help it along.

                  Once the sandwiches are crispy and golden, remove them from the skillet and let them cool for a minute before cutting.

                    Slice the sandwiches in half diagonally and garnish with chopped parsley.
