Ingredients

1 pound Italian sausage links (spicy or mild, your choice)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

8 ounces fettuccine or pasta of choice

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

Prepare the Sausage: While the pasta is cooking, heat a large skillet over medium heat. Slice the Italian sausage links into bite-sized pieces. Once the skillet is hot, add the sausage pieces and cook until browned and cooked through, about 5-7 minutes. Remove sausage from the skillet and set aside.

Make the Garlic Butter: In the same skillet, reduce the heat to low. Add the butter, letting it melt gently. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until the garlic is fragrant but not browned.

Add the Liquid: Pour in the chicken broth and heavy cream, stirring to combine. Increase heat slightly to medium and allow the mixture to simmer for about 3-4 minutes, letting it reduce slightly.

Incorporate the Cheese: Gradually whisk in the grated Parmesan cheese until melted and incorporated into the sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach desired consistency.

Combine: Add the cooked pasta and sausage back into the skillet, tossing to coat everything evenly in the creamy sauce. Season with salt and pepper to taste.

Serve: Plate the creamy pasta and sausage mixture. Garnish with chopped fresh parsley for a burst of color and freshness.
