2 salmon fillets (6 oz each)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 can (15 oz) white beans (e.g., cannellini or great northern), drained and rinsed

1 lemon (zested and juiced)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Olive oil, for cooking

Prepare the Beans: In a small saucepan, combine the white beans, lemon zest, lemon juice, and a pinch of salt and pepper. Set aside to warm over low heat.

    Cook the Salmon: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper on both sides. Once the skillet is hot, add the salmon, skin-side down. Cook for 4-5 minutes until the skin is crispy.

      Add Garlic Butter: Flip the salmon fillets gently and reduce the heat to medium. Add the butter and minced garlic around the salmon. As the butter melts, use a spoon to baste the salmon with the garlic butter. Cook for an additional 4-6 minutes, or until the salmon flakes easily with a fork and is cooked through.

        Finish the Beans: While the salmon is cooking, stir the white beans occasionally, allowing them to warm through for about 5-7 minutes. Adjust seasoning with salt, pepper, and a splash more lemon juice if desired.

          Serve: To plate, spoon the warm lemon white beans onto the center of each plate. Top with a salmon fillet, drizzling some of the garlic butter from the pan over the top. Garnish with chopped fresh parsley.
