Garlic and Spinach Stuffed Pasta Shells

12 large jumbo pasta shells

2 cups fresh spinach, chopped

3 cloves garlic, minced

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg, lightly beaten

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: Boil a large pot of salted water. Add the jumbo pasta shells and cook until al dente according to package instructions. Drain and set aside to cool slightly.

    Prepare the Filling: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the minced garlic until fragrant, about 1 minute. Add the chopped spinach and cook until wilted, around 2-3 minutes. Remove from heat and let it cool.

      Mix the Filling: In a large bowl, combine the sautéed garlic and spinach, ricotta cheese, half of the mozzarella, Parmesan cheese, egg, Italian herbs, salt, and pepper. Mix well until combined.

        Stuff the Shells: Preheat your oven to 375°F (190°C). Spoon some marinara sauce into the bottom of a 9x13 inch baking dish. Take each cooked pasta shell and carefully stuff it with the spinach and cheese mixture. Arrange the stuffed shells in the baking dish.

          Top with Sauce and Cheese: Once all shells are stuffed, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese evenly over the sauce.

            Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
