8oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh strawberries, hulled and sliced

4 slices of thick bread (like brioche or Texas toast)

1 cup crushed graham crackers

2 large eggs

1/4 cup milk

1 tsp cinnamon

Vegetable oil for frying

Optional: Whipped cream and mint leaves for garnish

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Whisk until smooth and creamy.

    Lay out the slices of bread and spread a generous amount of the cream cheese mixture on two of the slices. Top with the sliced strawberries, then place the other two slices of bread on top to create sandwiches.

      In a shallow bowl, beat the eggs with the milk. In another shallow dish, mix the crushed graham crackers and cinnamon together.

        Heat vegetable oil in a large skillet over medium heat. You want enough oil to cover the bottom of the pan generously.

          Dip each sandwich into the egg mixture, ensuring both sides are well coated. Immediately coat each sandwich in the graham cracker mixture, pressing gently to adhere the topping.

            Once the oil is hot, carefully place the sandwiches in the skillet. Fry each sandwich for about 3-4 minutes on each side or until they are golden brown and crispy.

              Remove the sandwiches from the skillet and place them on paper towels to absorb excess oil.

                Cut each sandwich in half and serve warm, optionally topped with whipped cream and garnished with mint leaves.
