Ingredients
  

1 lb large shrimp, peeled and deveined

1 cup shredded coconut

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon lime zest

Salt and pepper to taste

Oil for frying

Lime wedges, for serving

Instructions
 

Begin by preparing your shrimp. If not already done, peel and devein the shrimp, then pat them dry with paper towels.

    In a shallow bowl, combine the flour, garlic powder, paprika, lime zest, and a pinch of salt and pepper. Mix well.

      In a second shallow bowl, beat the two eggs.

        In a third shallow bowl, mix the shredded coconut and panko breadcrumbs until well combined.

          Take each shrimp and first coat it in the seasoned flour mixture, shaking off any excess.

            Next, dip the floured shrimp into the beaten eggs, allowing any excess to drip off.

              Finally, dredge the shrimp in the coconut-panko mixture, pressing down lightly to ensure an even coating.

                Heat oil in a deep skillet or frying pan over medium-high heat (about 350°F or 175°C). You will need enough oil to submerge the shrimp halfway.

                  Once the oil is hot, carefully add the shrimp in batches to avoid overcrowding the pan. Fry for 2-3 minutes on each side, or until golden brown and crispy.

                    Use a slotted spoon to remove the shrimp from the oil and transfer them to a paper towel-lined plate to drain off excess oil.

                      Serve immediately with fresh lime wedges on the side for squeezing over the shrimp.
