1 lb smoked Polish sausage, sliced

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, chopped

1 teaspoon paprika

1 teaspoon dried thyme

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Begin by peeling and dicing the potatoes into bite-sized pieces. Place them in a bowl of water to prevent browning while you prepare the other ingredients.

    Sauté the Sausage: Heat olive oil in a large skillet over medium heat. Add the sliced Polish sausage and cook until browned and crispy, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
