1 red bell pepper, chopped

1 teaspoon paprika

1 teaspoon dried thyme

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Begin by peeling and dicing the potatoes into bite-sized pieces. Place them in a bowl of water to prevent browning while you prepare the other ingredients.

    Sauté the Sausage: Heat olive oil in a large skillet over medium heat. Add the sliced Polish sausage and cook until browned and crispy, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.

      Cook the Vegetables: In the same skillet, add the chopped onion and red bell pepper. Sauté for 3-4 minutes until they begin to soften. Add minced garlic and cook for an additional minute until fragrant.

        Fry the Potatoes: Drain the diced potatoes from the water and pat them dry with a kitchen towel. Add the potatoes to the skillet, stirring to combine with the vegetables. Season with paprika, thyme, salt, and pepper.
