1 ripe pineapple, peeled and sliced into rings

1 cup shredded coconut (sweetened or unsweetened)

1/2 cup all-purpose flour

2 large eggs

1/4 teaspoon salt

1 tablespoon sugar (optional)

1 cup vegetable oil (for frying)

Honey or maple syrup (for drizzling, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Begin by preparing the pineapple. Cut the top and bottom off the pineapple, then stand it upright on a cutting board and slice off the skin. Remove the core and slice the pineapple into rings about 1/2 inch thick.

    In a shallow bowl, place the flour, salt, and sugar (if using) and mix together.

      In another bowl, crack the eggs and whisk them until well beaten.

        In a third bowl, place the shredded coconut.

          Take each pineapple ring and first coat it in the flour mixture, shaking off any excess.

            Next, dip the floured pineapple into the beaten eggs, making sure it’s fully coated.

              Finally, roll the egg-coated pineapple in the shredded coconut, pressing gently to ensure the coconut adheres well. Repeat for all pineapple rings.

                In a deep frying pan or skillet, heat the vegetable oil over medium heat until it’s hot (about 350°F or 175°C).

                  Carefully place the coconut-crusted pineapple rings in the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes on each side until golden brown and crispy.

                    Once fried, remove the rings and place them on paper towels to drain excess oil.

                      For serving, drizzle with honey or maple syrup if desired and garnish with fresh mint leaves to add a pop of color.
