1 ripe pineapple, peeled and cut into 1/2 inch rings

1/2 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon ground cinnamon

1/4 cup coconut milk

1 large egg

1/4 cup sweetened shredded coconut (optional)

1/4 cup vegetable oil (for frying)

Honey or maple syrup (for drizzling)

Fresh mint leaves (for garnish)

Start by preparing the pineapple rings. Make sure they are evenly cut to ensure they fry evenly. Pat them dry with a paper towel to remove any excess moisture.

    In a medium bowl, mix together the flour, cornstarch, baking powder, salt, and ground cinnamon. This will be your dry mix.

      In another bowl, whisk together the coconut milk and egg until thoroughly combined.

        Gradually add the wet mixture to the dry mixture, stirring until a smooth batter forms. If you want an extra tropical flavor, stir in the shredded coconut at this point.

          Heat the vegetable oil in a large skillet over medium heat. You want enough oil so that the pineapple rings can float a little while frying.

            Once the oil is hot, dip each pineapple ring into the batter, coating both sides evenly. Allow excess batter to drip off before placing the ring in the hot oil.

              Fry the rings for about 2-3 minutes on each side, or until they are golden brown and crispy. Avoid overcrowding the pan; you can fry them in batches if necessary.

                Once fried, remove the rings from the skillet and place them on a plate lined with paper towels to absorb excess oil.

                  Serve the fried pineapple rings warm, drizzled with honey or maple syrup, and garnish with fresh mint leaves.
