Ingredients
Β Β

4 slices of bread (white or whole grain)

4 tablespoons creamy peanut butter

2 ripe bananas, sliced

1 tablespoon honey (optional)

1 teaspoon ground cinnamon

2 eggs

1/4 cup milk

1/2 cup breadcrumbs (optional for extra crunch)

2 tablespoons butter or coconut oil, for frying

Powdered sugar, for dusting (optional)

Instructions
Β

Begin by spreading 1 tablespoon of creamy peanut butter on each slice of bread.

On two slices, layer the banana slices evenly and drizzle with honey if using. Top with the remaining slices to form a sandwich.

In a shallow bowl, whisk together the eggs and milk until well combined. Set aside.

If you like, place the breadcrumbs on a plate for an extra crunchy coating.

Heat a skillet over medium heat and add butter or coconut oil.

Dip each sandwich carefully into the egg mixture, allowing any excess to drip off, then coat with breadcrumbs if desired.

Once the skillet is hot, place the sandwiches in the skillet. Cook until golden brown and crispy, about 2-3 minutes per side.

Remove the sandwiches from the skillet and let them drain on paper towels.

Dust with powdered sugar if desired before slicing and serving warm.
