Fried Green Beans with Ham & Radish Greens

1 pound fresh green beans, trimmed

4 slices of ham (bacon or prosciutto can be used as alternatives), chopped

1 cup radish greens, washed and roughly chopped

1/2 cup all-purpose flour

1/4 cup cornmeal

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup buttermilk (or milk)

Oil for frying (canola or vegetable oil)

Instructions
 

Prepare the Green Beans: In a large pot, bring salted water to a boil. Add the trimmed green beans and blanch for about 2-3 minutes until they are bright green and tender-crisp. Drain and immediately transfer them to an ice bath to stop cooking. Once cooled, drain again and pat dry with paper towels.

    Make the Coating: In a bowl, combine the flour, cornmeal, garlic powder, onion powder, smoked paprika, salt, and pepper. In another bowl, pour the buttermilk.

      Coat the Green Beans: Dip each green bean into the buttermilk, then dredge in the flour mixture until well coated. Shake off any excess flour.

        Cook the Ham & Radish Greens: In a large skillet, heat about 1/2 inch of oil over medium heat. Once hot, add the chopped ham and cook until crispy, about 3-4 minutes. Then, toss in the radish greens, cooking until they wilt, about 2 minutes. Remove the ham and greens from the skillet and set them aside on a plate lined with paper towels.

          Fry the Green Beans: In the same skillet, carefully add the coated green beans in batches to avoid overcrowding. Fry the beans for about 3-5 minutes, turning occasionally, until golden brown and crispy. Remove and drain on paper towels.

            Serve: In a serving bowl, mix the crispy green beans with the cooked ham and radish greens. Adjust seasoning with additional salt and pepper if desired. Enjoy while hot!
