4 pieces of fresh cod fillets (about 6 oz each)

1 cup all-purpose flour

1 cup cornmeal

2 teaspoons paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust for spice preference)

Salt and black pepper to taste

1 cup buttermilk

1 tablespoon lemon juice

4 sandwich buns (preferably brioche)

4 slices of cheddar cheese

2 cups shredded lettuce

1 large tomato, sliced

Tartar sauce (store-bought or homemade, to taste)

Vegetable oil (for frying)

Instructions
 

Prep the Cod: Rinse the cod fillets under cold water and pat them dry with paper towels. Sprinkle salt and pepper on both sides of each fillet.

    Prepare Breading Station: In a shallow bowl, combine the flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. In another bowl, mix the buttermilk with lemon juice; let it sit for 5 minutes to thicken slightly.

      Coat the Fillets: Dip each cod fillet in the buttermilk mixture, allowing excess to drip off. Then, dredge the fillet in the flour-cornmeal mixture, pressing lightly to ensure an even coating. Place the breaded fillets on a plate and let them rest for about 10 minutes.

        Heat Oil: In a large skillet or deep fryer, heat about an inch of vegetable oil over medium-high heat (approximately 350°F or 175°C).

          Fry the Cod: Carefully add the breaded cod fillets to the hot oil (do not overcrowd the pan). Fry for about 4-5 minutes per side, or until the fillets are golden brown and cooked through. Use a slotted spoon to transfer onto a plate lined with paper towels to absorb excess oil.
