Ingredients

4 ripe bananas, sliced lengthwise

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1 teaspoon cinnamon

1/4 teaspoon salt

1 cup cold water

1/2 cup brown sugar, packed

1/4 cup coconut oil (for frying)

Chopped nuts (e.g., peanuts or walnuts) for garnish (optional)

Instructions

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, cinnamon, and salt. Whisk until well blended.

Gradually add the cold water to the dry ingredients, stirring until you achieve a smooth batter. The batter should be thick enough to coat the banana slices.

Heat the coconut oil in a deep frying pan over medium heat. Ensure the oil is hot (about 350°F or 175°C) for best frying results.

Dip each banana slice into the batter, ensuring it's fully covered, then gently place it into the hot oil. Fry in batches, being careful not to overcrowd the pan.

Fry each banana slice for about 2-3 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

While the fried bananas are still warm, sprinkle them generously with brown sugar. Allow the sugar to melt slightly onto the bananas and create a sweet glaze.

If desired, sprinkle chopped nuts over the top for added crunch. Serve warm for the best taste experience.
