1 ready-made pie crust (9-inch)

4-5 medium heirloom tomatoes, sliced

1 cup fresh basil leaves, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

1 egg (optional, for egg wash)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the ricotta cheese, shredded mozzarella, half of the Parmesan cheese, minced garlic, chopped basil, dried oregano, salt, and pepper. Mix until well combined.

      Place the ready-made pie crust in a 9-inch pie dish, gently pressing it into the corners. Prick the bottom with a fork to prevent bubbling.

        Layer the sliced heirloom tomatoes evenly over the bottom of the pie crust, slightly overlapping them.

          Spread the cheese and basil mixture over the tomatoes, gently pressing down to ensure it adheres to the tomatoes.

            Sprinkle the remaining Parmesan cheese on top.

              If using, beat the egg with a tablespoon of water and brush it over the edges of the pie crust for a golden finish.

                Drizzle olive oil over the top of the pie before placing it in the oven.

                  Bake for 35-40 minutes, or until the top is golden and the edges of the crust are lightly browned.

                    Remove from the oven and let it cool for about 10 minutes before slicing.
