Ingredients

2 slices thick brioche bread

1 large chicken breast, boneless and skinless

½ cup buttermilk

1 egg

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon cayenne pepper (optional, for heat)

Salt and pepper, to taste

1 cup all-purpose flour

1 tablespoon cornstarch

1 cup breadcrumbs (panko for extra crunch)

2 tablespoons maple syrup (for dipping)

Cooking oil (for frying)

Butter (for grilling)

Lettuce leaves (for garnish)

Pickles (optional, for garnish)

Hot sauce (optional, for added spice)

Instructions

Prepare the Chicken:

    - In a bowl, combine the buttermilk, egg, garlic powder, paprika, cayenne pepper, salt, and pepper.

      - Place the chicken breast in the mixture, ensuring it is fully coated. Cover and marinate in the refrigerator for at least 30 minutes (or overnight for more flavor).

        Dredge the Chicken:

          - In a shallow dish, mix the flour and cornstarch together.

            - In another shallow dish, place the breadcrumbs.

              - Remove the marinated chicken from the buttermilk mixture, allowing excess moisture to drip off.

                - Dredge the chicken in the flour mixture, then dip it back into the buttermilk, and finally coat it in the breadcrumbs until well covered.

                  Fry the Chicken:

                    - Heat a large skillet over medium-high heat and add enough cooking oil to cover the bottom.

                      - Once hot, carefully add the breaded chicken to the skillet. Fry for about 6-8 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C).

                        - Remove the chicken from the skillet and let it drain on a paper towel.

                          Make the French Toast:

                            - In a shallow bowl, whisk together 2 eggs, ¼ cup milk, and a pinch of salt.

                              - In the same skillet, reduce the heat to medium-low and melt 1 tablespoon of butter.

                                - Dip the brioche slices on both sides in the egg mixture, then place them in the skillet. Cook for about 2-3 minutes on each side until golden brown and crispy.

                                  Assemble the Sandwich:

                                    - On one slice of the French toast, place a piece of the fried chicken. Drizzle with maple syrup and add lettuce and pickles if desired.

                                      - Top with the second slice of French toast to create the sandwich.

                                        Serve:

                                          - Cut the sandwich in half and serve warm. Offer hot sauce on the side for those who want extra kick.
