Ingredients

1 lb flank steak, pounded to 1/4 inch thickness

1 large onion, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 tablespoon Worcestershire sauce

1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme

1 cup gruyère cheese, shredded

Salt and pepper to taste

Toothpicks or kitchen twine

Instructions

Sauté the Onions: In a skillet over medium heat, melt the butter and olive oil. Add the thinly sliced onion and sauté until soft and caramelized, about 15-20 minutes. Stir in the Worcestershire sauce and thyme, cooking for another 2 minutes. Season with salt and pepper to taste. Remove from heat and allow to cool slightly.

Prepare the Steak: Lay the pounded flank steak flat on a clean cutting board. Season both sides with salt and pepper.

Assemble the Pinwheels: Evenly spread the caramelized onions over the steak, leaving a small border. Sprinkle the shredded gruyère cheese on top of the onions, ensuring even coverage.

Roll the Steak: Starting from one end, gently roll the steak tightly into a log shape. Secure the ends with toothpicks or tie with kitchen twine.

Cook the Pinwheels: Preheat a grill or grill pan over medium-high heat. Sear the pinwheels for about 3-4 minutes on each side or until your desired doneness is achieved. Remove from heat and let them rest for about 5 minutes.

Slice and Serve: Carefully cut the pinwheels into 1-inch thick slices. Arrange them on a serving platter.
