1 lb ground beef

1 lb ground pork

1 large onion, finely chopped

2 cloves garlic, minced

1 cup French onion soup (canned or homemade)

1 cup breadcrumbs (preferably seasoned)

2 large eggs

1 tablespoon Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon dried thyme

½ teaspoon dried rosemary

1 cup shredded Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped, for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

    In a skillet over medium heat, add a splash of olive oil and sauté the chopped onion until caramelized, about 10-12 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant. Remove from heat and let it cool slightly.

      In a large mixing bowl, combine the ground beef and ground pork.

        Add the cooled sautéed onion and garlic mixture to the meats.

          Pour in the French onion soup, breadcrumbs, eggs, Worcestershire sauce, salt, pepper, thyme, and rosemary. Mix everything together until just combined; do not overmix.

            Fold in the shredded Gruyère cheese gently until evenly distributed.

              Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.

                Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through.

                  Let the meatloaf rest for about 10 minutes after removing it from the oven before slicing it.

                    Garnish with freshly chopped parsley before serving.
