1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

4 slices of sourdough bread

4 slices of Gruyère cheese (or Swiss cheese)

2 slices of sharp cheddar cheese

Salt and pepper to taste

1 tablespoon balsamic vinegar (optional for extra depth)

Caramelize the Onions: In a large skillet over medium heat, melt the butter and olive oil together. Add the sliced onions and sprinkle with a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until they are soft and caramelized. Add the brown sugar and thyme, and sauté for an additional 2-3 minutes until golden brown. If desired, add the balsamic vinegar and stir well. Remove from heat and set aside.

    Assemble the Sandwich: Spread some butter on one side of each slice of sourdough bread. On the unbuttered side of two slices, layer a slice of Gruyère cheese followed by a generous spoonful of the caramelized onions, then add another slice of Gruyère and a slice of sharp cheddar on top. Close the sandwich with the remaining slices of bread, buttered side out.
