4 chicken thighs, skin-on and bone-in

2 tablespoons olive oil

1 large onion, sliced

2 cloves garlic, minced

2 cups mushrooms, sliced (preferably button or cremini)

1 cup dry white wine (e.g., Chardonnay)

1 cup chicken broth

1 tablespoon Dijon mustard

2 apples, peeled, cored, and sliced (preferably Granny Smith)

1 cup heavy cream

1 teaspoon dried thyme

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Brown the Chicken: In a large, oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Add them to the skillet and brown on both sides for about 5-7 minutes. Remove the chicken and set aside.

      Sauté the Aromatics: In the same skillet, add the sliced onion and cook until softened, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.

        Deglaze with Wine: Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let cook for about 3-4 minutes to reduce slightly.

          Combine Ingredients: Stir in the chicken broth, Dijon mustard, dried thyme, and the sliced apples. Return the browned chicken thighs to the pan, nestling them among the apples and mushrooms.

            Add the Cream: Pour the heavy cream over the top of the casserole, ensuring the chicken is nicely coated. Adjust seasoning with additional salt and pepper as needed.

              Bake: Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 35-40 minutes, or until the chicken is fully cooked and tender.

                Serve: Remove the casserole from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving. Pair with crusty bread or over a bed of rice to soak up that delicious sauce.
