Ingredients

2 cups all-purpose flour

1 cup warm water (about 110°F)

2 teaspoons active dry yeast

1 teaspoon sugar

1 teaspoon salt

¼ cup extra virgin olive oil (plus more for drizzling)

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

1 cup sliced pepperoni

1 teaspoon dried oregano

½ teaspoon garlic powder

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Dough: In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.

Mix the Dough: Add flour, salt, and olive oil to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms.

Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.

Prepare Focaccia Base: After the dough has risen, preheat your oven to 425°F (220°C). Grease a baking sheet or a 12-inch round pan with olive oil.

Shape the Dough: Punch down the risen dough and transfer it to the prepared pan. Gently stretch the dough to fit the pan, creating dimples with your fingers all over the surface.

Season and Bake: Drizzle olive oil over the dough, sprinkle with garlic powder and oregano, and allow it to rest for another 20 minutes. Then, bake for about 15 minutes until lightly golden.

Add Toppings: Remove from the oven and spread a layer of marinara sauce over the focaccia base. Evenly sprinkle the shredded mozzarella cheese on top and arrange the pepperoni slices.

Final Bake: Return the focaccia pizza to the oven and bake for an additional 15-20 minutes or until the cheese is bubbly and golden brown.

Garnish and Serve: Once baked, remove from the oven, let it cool slightly, and garnish with fresh basil leaves if desired. Cut into slices and enjoy!
