1 cup cottage cheese (preferably low-fat)

3 large eggs, separated

1/4 teaspoon cream of tartar

1/2 teaspoon garlic powder (optional)

1/2 teaspoon onion powder (optional)

Salt and pepper to taste

1/4 cup almond flour (or coconut flour for a nut-free option)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a medium bowl, combine the cottage cheese and egg yolks. Stir until smooth. If desired, add garlic powder, onion powder, salt, and pepper for extra flavor; mix well.

      In a separate large bowl, beat the egg whites along with the cream of tartar until soft peaks form. This may take about 3-5 minutes of beating.

        Gently fold the egg whites into the cottage cheese mixture using a spatula. Start by adding about a third of the egg whites to lighten the mixture, then gently fold in the rest until no streaks remain.

          Carefully fold in the almond flour until just combined, ensuring not to deflate the whipped egg whites too much.

            Spoon the mixture onto the prepared baking sheet, forming six to eight round clouds about 1 inch thick.

              Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and have risen slightly.

                Allow the cloud bread to cool slightly on the baking sheet before transferring to a wire rack to cool completely.
