1 cup cottage cheese (full-fat for better fluffiness)

3 large eggs

1/4 teaspoon cream of tartar

1/2 teaspoon garlic powder (optional for flavor)

1/4 teaspoon salt

1 tablespoon chopped fresh chives or parsley (optional)

Instructions
 

Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

    In a mixing bowl, add the cottage cheese and eggs. Using a hand mixer or a whisk, blend until smooth and creamy.

      In a separate bowl, beat the egg whites with the cream of tartar until stiff peaks form, which usually takes about 3-5 minutes with a hand mixer.

        Carefully fold the cottage cheese and egg mixture into the beaten egg whites. Use a spatula and make sure to do this gently to avoid deflating the egg whites.

          Sprinkle in the garlic powder, salt, and chopped herbs (if using) and fold in until just combined.

            Using a spoon or a scoop, portion out the mixture onto the prepared baking sheet, shaping them into small rounds (about the size of a palm).

              Bake in the preheated oven for about 25-30 minutes, or until the cloud bread is golden brown and cooked through.

                Once baked, remove from the oven and let cool slightly on the baking sheet before transferring to a wire rack.
