2 cups jasmine rice

1 pound fresh salmon fillets

3 tablespoons sriracha sauce

1 tablespoon honey

1 tablespoon soy sauce

1 avocado, sliced

1 cucumber, thinly sliced

1 cup shredded carrots

2 green onions, chopped

1 tablespoon sesame seeds

1 tablespoon vegetable oil

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. Combine the rice with 2 ½ cups of water in a rice cooker and cook according to the manufacturer's instructions. Alternatively, bring to a boil in a saucepan, reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

    Prepare the Salmon: While the rice is cooking, prepare the spicy salmon. In a small bowl, mix together sriracha, honey, soy sauce, and a pinch of salt. Rub this mixture over the salmon fillets, ensuring they are well coated.

      Cook the Salmon: Heat vegetable oil in a large non-stick skillet over medium-high heat. Place the salmon fillets, skin-side down, in the pan and cook for about 4-5 minutes until the skin is crispy. Carefully flip the fillets and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork. Remove from heat and let rest for a moment.

        Assemble the Bowl: To assemble, divide the cooked jasmine rice into two bowls. Top each bowl with a piece of the spicy salmon.

          Add the Veggies: Arrange sliced avocado, cucumber, and shredded carrots around the fish on the rice.
