4 large onions (Vidalia or yellow), peeled

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably Italian-style)

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

3 tablespoons olive oil

Preheat your oven to 375°F (190°C).

    Slice off the top of each onion, ensuring you don’t cut too deeply so they hold together. Remove the outer layers while keeping the base intact.

      Use a small knife to carefully cut into the onions and create sections, creating a flower-like appearance (be careful not to cut through the base).

        In a mixing bowl, combine the mozzarella, Parmesan, breadcrumbs, parsley, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.

          Drizzle the olive oil over the onions, ensuring each layer receives some. Gently separate the layers to help the oil penetrate.

            Stuff each onion blossom with the cheese and breadcrumb mixture, pressing gently to ensure it adheres.

              Place the stuffed onions upright in a baking dish. Pour a bit of water into the bottom of the dish (to create steam) and cover with aluminum foil.

                Bake in the preheated oven for 30 minutes, then remove the foil and bake for an additional 15 minutes or until the onions are tender and the cheese topping is golden and bubbly.

                  Remove from the oven and let cool for a few minutes before serving.
