4 medium potatoes, sliced thinly

1 large onion, diced

1 bell pepper (any color), diced

2 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh herbs (like parsley or chives) for garnish

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil.

    Layer the bottom of the baking dish with the sliced potatoes. Sprinkle a little salt and pepper over the layer.

      In a skillet over medium heat, add the remaining olive oil. Sauté the diced onion and bell pepper until softened, about 5 minutes. Add the chopped spinach and cook until wilted.

        Evenly distribute the sautéed onion, bell pepper, and spinach mixture over the layer of potatoes in the baking dish.

          Add the halved cherry tomatoes on top of the sautéed vegetables.

            In a large bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until well combined. Pour the egg mixture over the layers in the baking dish.

              Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

                Cover the baking dish with aluminum foil and bake for 30 minutes.

                  Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                    Let the casserole cool for a few minutes, then garnish with fresh herbs before serving.
