6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

2 tablespoons fresh chives, finely chopped

2 tablespoons fresh dill, finely chopped

Salt and pepper to taste

4 slices of whole grain or sourdough bread

Lettuce leaves (optional, for serving)

Tomato slices (optional, for serving)

Instructions
 

Boil the Eggs: Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, cover the saucepan and remove it from heat. Let the eggs sit in hot water for 12 minutes for hard-boiled eggs.

    Cool the Eggs: After 12 minutes, transfer the eggs to a bowl of ice water for about 5 minutes to cool them down quickly and prevent overcooking.

      Peel the Eggs: Tap the eggs gently on a hard surface and peel under running water to help remove the shells easily.

        Prepare the Salad Mixture: In a mixing bowl, chop the cooled eggs into small pieces. Add mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, smoked paprika, fresh chives, and fresh dill.

          Mix Everything Together: Gently fold the ingredients together until well combined. Be careful not to mash the eggs too much; you want it to be chunky.

            Season to Taste: Add salt and pepper to taste, adjusting based on your preference.

              Assemble the Sandwiches: Lay out the slices of bread. Spread a generous amount of the egg salad on two slices. If desired, add romaine or iceberg lettuce and tomato slices for added freshness. Top with the remaining slices of bread.

                Serve: Cut the sandwiches in half or quarters and serve immediately, or wrap them tightly for a delicious lunch on the go!
