Ingredients

1 lb ground beef (or turkey)

1 can (15 oz) black beans, drained and rinsed

1 can (8 oz) corn, drained

1 cup salsa

1 packet taco seasoning

2 cups tortilla chips, crushed

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/4 cup sliced green onions

1/4 cup fresh cilantro, chopped (optional for garnish)

Sour cream (for serving, optional)

Instructions

Preheat the oven to 350°F (175°C).

In a large skillet over medium heat, cook the ground beef or turkey until browned, breaking it apart with a spoon as it cooks (about 5-7 minutes). Drain excess grease if needed.

Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 3-4 minutes until everything is heated through and combined well.

In a large mixing bowl, combine the crushed tortilla chips with the meat mixture until everything is evenly coated.

Transfer half of the mixture into a greased 9x13-inch baking dish. Layer half of the cheddar and mozzarella cheeses over the top.

Add the remaining meat mixture, topping it with the rest of the cheese.

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions and cilantro, if desired.

Serve warm with a dollop of sour cream on the side for extra creaminess.
