1 cup freshly squeezed lime juice (about 8 limes)

1 cup diced cucumber

1 cup diced tomatoes

½ cup red onion, finely chopped

1 jalapeño, minced (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Avocado slices (for garnish)

Tortilla chips (for serving)

Start by chopping the shrimp into small bite-sized pieces and place them in a large glass or ceramic bowl. Avoid metal bowls as it can react with the lime juice.

    Pour the freshly squeezed lime juice over the shrimp, ensuring they are fully submerged. The acidity from the lime will cook the shrimp. Cover the bowl with plastic wrap and refrigerate for about 30 minutes, or until the shrimp become opaque and firm.

      While the shrimp is marinating, prep your vegetables: dice the cucumber, tomatoes, and red onion, and finely chop the cilantro and jalapeño.

        After 30 minutes, check the shrimp. Once they are cooked through, add the diced cucumber, tomatoes, red onion, minced jalapeño, and cilantro to the bowl.
