Ingredients
  

1 cup granulated sugar

1/4 cup corn syrup

1/4 cup water

1/4 cup unsweetened cocoa powder

2 large egg whites

1 teaspoon vanilla extract

1 cup mini marshmallows

1 cup milk chocolate chips

2 tablespoons butter

Instructions
 

In a medium saucepan, combine granulated sugar, corn syrup, and water. Heat over medium heat, stirring until the sugar dissolves.

    Once the mixture comes to a boil, let it cook without stirring until it reaches a soft-ball stage (about 240°F or 115°C) on a candy thermometer. Remove from heat.

      In a clean mixing bowl, beat the egg whites until stiff peaks form. Gradually pour in the hot sugar mixture while continuing to beat on high speed until glossy and well combined.

        Stir in the cocoa powder and vanilla extract until evenly mixed.

          Gently fold in the mini marshmallows until they are evenly coated with the chocolate mixture.

            Pour the mixture into a greased 9x9-inch baking dish and spread evenly. Allow it to set at room temperature for about 2 hours, or until firm.

              Once set, cut the Scotchmallow mixture into bite-sized squares.

                In a small saucepan, melt the chocolate chips and butter together over low heat until smooth.

                  Dip each square into the melted chocolate, allowing excess to drip off. Place them on parchment paper to set.

                    Let the chocolate coating harden completely before enjoying your Fresh Scotchmallows!
