1 box red velvet cake mix

1/2 cup vegetable oil

3 large eggs

1/2 cup water

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup chocolate chips (white or dark, your choice)

1 cup whipped topping (for garnish)

Red sprinkles (optional, for decoration)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with cupcake liners or grease lightly with cooking spray.

    Prepare Cake Batter: In a large bowl, combine the red velvet cake mix, vegetable oil, eggs, and water. Mix until smooth and well combined, ensuring there are no lumps.

      Bake Cake Bites: Fill each mini muffin cup about 2/3 full with the red velvet batter. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted in the center comes out clean. Let them cool in the tin for 5 minutes before transferring to a cooling rack.

        Make Cheesecake Filling: While the cake bites are cooling, prepare the cheesecake filling. In another mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until it’s creamy and smooth.

          Combine: Once the red velvet bites are completely cooled, use a small knife or a cupcake corer to remove a small piece from the center of each cake bite. Fill this hole generously with the cheesecake mixture.

            Chocolate Dip (Optional): If you would like to finish them with a chocolate coating, melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Dip the tops of the filled red velvet bites into the melted chocolate and let them set on parchment paper.
