4 cups vegetable broth

2 tablespoons miso paste (white or yellow)

150g ramen noodles

1 cup broccolini, trimmed and cut into bite-sized pieces

1 small carrot, julienned

1 cup shiitake mushrooms, sliced

2 green onions, sliced (whites and greens separated)

1 tablespoon soy sauce

1 tablespoon sesame oil

2 soft-boiled eggs (optional)

Sesame seeds, for garnish

Seaweed sheets, for garnish (nori)

Instructions
 

In a large pot, combine the vegetable broth and bring it to a simmer over medium heat.

    Whisk in the miso paste until fully dissolved into the broth.

      Add the soy sauce and sesame oil, stirring to combine.

        Add the sliced shiitake mushrooms, julienned carrot, and broccolini to the pot. Allow the vegetables to cook for about 5 minutes, or until just tender.

          Meanwhile, cook the ramen noodles in a separate pot according to package instructions. Drain and set aside.

            Once the vegetables are tender, add the cooked ramen noodles to the broth. Stir gently to combine and heat through for another 2 minutes.

              Serve the ramen in large bowls, adding a soft-boiled egg (if using) to each bowl. Top with sliced green onions (the greens part) and a sprinkle of sesame seeds.

                Garnish with 1-2 pieces of nori sheets for an added texture and flavor.
